When you want something light but nutritious – a juicy buckwheat porridge salad is the perfect choice. Rich in vegetables, chickpeas and the aromas of fresh spices, it provides a balance between health and taste. Ideal for summer days or as a light lunch.

Ingredients:

  • 50 g buckwheat porridge

  • 20 g zucchini

  • 2 tomatoes

  • ½ can of chickpeas

  • ½ onion

  • 1 clove of garlic

  • fresh parsley

  • salt and pepper to taste

  • olive oil

  • balsamic vinegar

Procedure:

  1. Cook the buckwheat porridge in salted water and cool.

  2. Quickly fry or steam the zucchini so that they remain crispy.

  3. Finely chop the tomatoes, onion and garlic, rinse the chickpeas and add.

  4. Mix all the ingredients in a bowl, season with salt, pepper, olive oil and balsamic vinegar.

  5. Sprinkle with fresh parsley and serve chilled.
