Yeast-free spelt bread

Crispy and delicious yeast-free spelt bread is ready in less than an hour. Yogurt gives the bread softness, and the seeds add a pleasant nutty touch. Perfect for a homemade breakfast or as a healthy accompaniment to soups and salads.

Ingredients:

  • 500 g spelt flour (whole grain)

  • 1 heaped teaspoon of salt

  • 360 g of solid yogurt

  • 90 ml of water

  • 0.5 dl olive oil

  • 1 teaspoon baking soda

  • seed mixture (e.g. pumpkin, chia; 2–3 tablespoons if desired)

Procedure:

  1. Preheat the oven to 200 °C.

  2. In a large bowl, mix the flour, salt, and baking soda.

  3. Mix yogurt, oil, and water into the dry ingredients with a fork or hand mixer to form a compact dough.

  4. Form the loaf with your hands. If the dough is too sticky, flour your hands (do not add additional flour to the dough).

  5. Place the loaf on a baking sheet lined with baking paper and lightly flour the surface.

  6. Bake for 35–40 minutes (until golden brown). Cool on a wire rack and slice.
