Crispy and delicious yeast-free spelt bread is ready in less than an hour. Yogurt gives the bread softness, and the seeds add a pleasant nutty touch. Perfect for a homemade breakfast or as a healthy accompaniment to soups and salads.

Ingredients:
500 g spelt flour (whole grain)
1 heaped teaspoon of salt
360 g of solid yogurt
90 ml of water
0.5 dl olive oil
1 teaspoon baking soda
seed mixture (e.g. pumpkin, chia; 2–3 tablespoons if desired)
Procedure:
Preheat the oven to 200 °C.
In a large bowl, mix the flour, salt, and baking soda.
Mix yogurt, oil, and water into the dry ingredients with a fork or hand mixer to form a compact dough.
Form the loaf with your hands. If the dough is too sticky, flour your hands (do not add additional flour to the dough).
Place the loaf on a baking sheet lined with baking paper and lightly flour the surface.
Bake for 35–40 minutes (until golden brown). Cool on a wire rack and slice.
