Pancakes made with Tartary buckwheat flour and cottage cheese are soft, fluffy, and nutritious, making them an excellent choice for breakfast or dessert. Tartary buckwheat flour gives them a pleasant nutty flavor, while cottage cheese adds moisture and protein. Paired with warm caramelized apples and cinnamon, they make a simple, healthy, and very delicious meal.

Ingredients:

  • 100 g cottage cheese

  • 1 egg

  • 1 tablespoon honey

  • 3–4 tablespoons Tartary buckwheat flour

  • ½ teaspoon baking powder

  • A little lemon juice

  • A little milk

  • A pinch of salt (optional)


Caramelized Apples

Ingredients:

  • 1 apple, sliced

  • Honey

  • Cinnamon, to taste

  • A little lemon juice

Procedure:

Pancakes

  • In a bowl, mix the cottage cheese and egg until almost smooth.

  • Add the sugar, lemon juice, a little milk, and salt, then mix.

  • Stir in the Tartary buckwheat flour and baking powder.

  • Heat a little oil or butter in a pan over medium-low heat.

  • Spoon the batter into the pan to form small pancakes.

  • Cook until bubbles appear on the surface, then flip and cook until golden brown.


Caramelized Apples

  • Heat a little oil or butter in a pan.

  • Add the sliced apple, cinnamon, and lemon juice.

  • Cook over medium heat until the apples become soft and lightly caramelized.


Serving

Serve the pancakes with warm caramelized apples and a spoonful of yogurt or sour cream.


Tip:

You can also add walnuts, blueberries, or maple syrup, if desired.
