Looking for a quick, healthy, and filling meal? This simple combination with Tartary buckwheat groats is an excellent choice for lunch, dinner, or meal prep. What makes this recipe special is that the water used to cook the Tartary buckwheat groats is not discarded — instead, it is used to prepare a gentle, natural Tartary buckwheat tea.

Tartary buckwheat is rich in fiber and is a natural source of antioxidants, especially rutin. With just one preparation, you get 2 in 1: a nutritious meal and a natural drink with zero waste.

Ingredients:

  • 1 cup cooked Tartary buckwheat groats

  • 1/2 red onion

  • 1 tomato

  • 1/4 cucumber

  • 1 can tuna

  • olive oil

  • balsamic vinegar

  • salt and pepper, to taste

Procedure:

  1. Cook the Tartary buckwheat groats according to the package instructions, then let them cool.

  2. Do not discard the water in which the groats were cooked. Strain it and save it as natural Tartary buckwheat tea.

  3. Cut the red onion, tomato, and cucumber into small pieces.

  4. In a large bowl, mix the cooled Tartary buckwheat groats, chopped vegetables, and tuna.

  5. Season with olive oil, balsamic vinegar, salt, and pepper, then mix well.


Tartary Buckwheat Tea:

The tea can be enjoyed warm or chilled. It has a gentle, natural flavor and is a great way to use everything from the meal preparation — with no unnecessary waste.
