Buckwheat groats bake with apples is a traditional and nutritious dish that combines the rich flavor of buckwheat groats, the sweetness of apples, and the warm aroma of cinnamon. With its light texture and pleasant fruity taste, it is suitable as a dessert, breakfast, or light dinner. Buckwheat groats add nourishment, while apples and walnuts bring natural sweetness and a full, rich flavor.

Ingredients:
150 g buckwheat groats
300 ml milk
2 large eggs (or 3 smaller ones)
60 g sugar
10 g vanilla sugar
20 g butter
250 g sour cream
250–300 g grated apples
30 g ground walnuts
1 g lemon zest
1–2 g cinnamon
10 ml rum (optional)
1 g salt
Procedure:
1. Cooking the Buckwheat Groats
Rinse the buckwheat groats, add the milk and a pinch of salt, then cook for 12–15 minutes until softened and almost all the liquid has been absorbed. Remove from the heat and let it cool slightly for 5 minutes.
2. Egg Yolks
Mix the egg yolks with the sugar and vanilla sugar until light and fluffy.
3. Preparing the Mixture
Add the butter, 200 g of sour cream, lemon zest, cinnamon, and rum if desired. Then stir in the cooked buckwheat groats.
4. Apples and Walnuts
Gently fold the grated apples and ground walnuts into the mixture.
5. Egg Whites
Beat the egg whites with a pinch of salt until stiff peaks form, then carefully fold them into the mixture.
6. Preparing the Baking Dish
Line a baking dish with parchment paper and pour in the prepared mixture. Spread the remaining 50 g of sour cream on top.
7. Baking
Bake at 170–180 °C for about 40–45 minutes, until the top turns golden brown.
8. After Baking
Let the bake rest for about 15 minutes so it can set and cool slightly, then slice and serve.
Tip:
The bake can be served warm or cold. If desired, dust it with powdered sugar or serve it with a spoonful of yogurt.
